Poultry

All Puff-Pastry items
Preheat oven to 450F. Cook from frozen for 10 minutes., then reduce heat to 375F. cook for a further 40 minutes.

Boneless Stuffed Chicken Breasts
All items are to be cooked from frozen. Add a dash of salt, pepper and paprika (optional). Place chicken on a non-stick, pre-oiled baking tray. Bake at 400F for 40 minutes.

Cornish Game Hens
Preheat oven bake at 375F for 1 hour. Remove band and bake for an additional 10-15 minutes at 400F.

Chicken Tenders
Bake at 400F for 20 minutes.

Chicken Cutlets
Thaw in vacuum pack in cold water for 20 minutes. Cook to own requirements.

Shellfish

King Crab Legs
From frozen, boil or steam for approximately 4 minutes.

Scallops
These are uncooked. Thaw before cooking.

Cooked Shrimp
Thaw in a bowl of cool water for 20 minutes. They are then ready to be served as a cocktail. If they are to be used in stir fry or scampi, placed fully thawed shrimp in at the last moment.

Uncooked Shrimp
Thaw in a bowl of cool water for 20 minutes. Boil in water for 3 minutes and place in cold water for cocktail.. If they are to be used in stir fry or scampi, placed fully thawed shrimp in and cook to own requirements..

Maryland Crab Cakes
Preheat oven to 425F. Place on a cooking sheet, bake from frozen for 15-20 minutes, or thaw and fry on medium heat in shallow oil until golden brown

Lobster Tails
Thaw 15-20 minutes in cold water. Split shell lengthwise (on top). Pull meat out and place on top of shell, piggy-back style. You may leave it partially attached at the tail end and just lift out the meat. Baste with butter and continue basting through baking process. Bake at 400F for approximately 15 minutes or until meat loses its translucent appearance. Hint: 4 tablespoons of water in the baking pan will keep the meat extra moist.

Green Lip Mussels
Wash in cold water. Steam for 20-30 minutes from frozen.

Meat

Thaw all meats in vacuum pack either in cold water for 30 minutes or leave in refrigerator overnight before opening vacuum pack. Cook steak to your own requirements.
Cooking Suggestions for Pork Loin Roast: Thaw, Salt & Pepper, Cook @300 for 45 minuets, serve with sweet and sour sauce.
Cooking Suggestions for Leg of Lamb: Thaw, Season; (salt pepper rosemary), 350 for 1 hour and 25 minutes, serve with fresh mint sauce.
Cooking Suggestions for Chateaux Briand: Thaw, sear on stovetop, prick with sharp knife and insert garlic cloves, place in high sided tray, cover with plenty of sliced onions and mushrooms and add half a bottle of red wine. Cook for 30- 40 minutes @ 350.

Fish

Thaw in sink full of COLD water for 30 minutes. Remove from cry-o-vac, prepare. Basic tips: DON’T OVERCOOK! This is the most important advise to be given. Excess cooking will only dry it out and make it flavorless. Fish is naturally tender. It should be cooked just to firm the flesh. Use this rule of thumb: measure the fish at its thickest point - its depth, not across the fish and cook exactly 10 minutes per inch. If fish is 1/2” thick, cook it for 5 minutes. If it is 1 1/2” thick, cook for 15 minutes. This rule applies to every sort of preparation method: baking, broiling, sauting, frying, poaching and steaming.

Mini Beef or Chicken Wellington
Bake from frozen in a preheated 450F oven on a baking sheet for 11-12 minutes or until golden brown.

All Cocktail Egg & Spring Rolls
Bake from frozen in a preheated 450F oven on a baking sheet for 11-12 minutes.

Best when defrosted first, Cook in conventional oven at 350F for 6-8 minutes or until done.

Bake from frozen in pre-heated 400F oven for 15-20 minutes or until done.

Sesame Chicken
Deep fry from frozen at 350F for 2-3 minutes or until golden brown.

Chicken Gordita
Heat from frozen in a conventional oven at 375F for 8-10 minutes or until done.

Pre-Cooked Rumaki
Defrost first. Heat in conventional oven at 350F for 15-20 minutes or until done.

Quesadillas
Bake from frozen in pre-heated 400F oven for 15-20 minutes or until done.

Spanicopita, Veges & Chicken & Mushroom in Philo
Bake from frozen in pre-heated 400F oven for 8-10 minutes or until done.

Brie En Croute
Bake from frozen in pre-heated 450F oven for 10-15 minutes or until done.

Parmesan Artichoke Hearts
Drop a little olive oil on each item and bake from frozen in pre-heated 450F oven for 10-15 minutes or until done.
